This is one of our favorite recipes. Easy, yummy, and fast. You can't beat that!
The filling is similar to something you would use for enchiladas but instead of rolling it up in a tortilla, you bake it in a roll.

Ingredients:
1 package (8 ounces) cream cheese, softened
2 cups cubed cooked chicken
1-1/2 cups shredded cheddar cheese
1 can (4 ounces) chopped green chilies
3 tablespoons chopped green onions
1 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon chili powder
2 tablespoons cilantro
2 tablespoons cilantro
4-6 Hard rolls or buns.
Mix everything together and place in rolls. Bake at 375º for 5-7 minutes.

**I use about half the amount of cheese the original recipe calls for and I wrap each bun in foil before baking so the bread doesn't dry out.

How interesting! I'm not that into Mexican, but I LOVE sandwiches so this is really appealing. I think they look great!
