Here's a yummy recipe for Chicken Enchiladas. These are so easy to make and the great thing is you don't have to measure anything!
Ingredients:
2 Chicken Breast, shredded
Cilantro
Green Chilies
Chili powder (a few dashes)
Cumin (a few dashes)
Pepper Jack cheese
2 cans Enchilada sauce (I really want to try this enchilada sauce and I've heard this one is amazing)
Flour Tortillas
Mix together:
Chicken
Cilantro
Green Chilies
Chili powder
Cumin
Pepper Jack cheese
Place filling in tortilla.
Coat pan with cooking spray and pour enough enchilada sauce to cover the bottom of the dish. Place tortillas seam side down then cover with remaining sauce and top with cheese.
Bake at 350° for 20-25 minutes or until cheese is bubbly.
Enjoy!

Woo Hoo! I am so glad you linked this delicious and easy recipe to Woo Hoo! Wednesday. I'm definitely going to try it, probably this weekend. I keep Costco baked chicken (I bone and put meat in freezer bags)in the freezer and I think that will be tasty in this recipe. Yum!

These look so delicious! We are lovers of anything Mexican. I like green sauce too. I once made Tyler Florence's ultimate enchiladas and they had a roasted tomatillo sauce. It was so good I could have just sat down with a spoon and eaten like soup. I will definitely have to give this one a try. Thanks Emily!
