Chicken Enchilada Sandwiches

This is one of our favorite recipes.  Easy, yummy, and fast.  You can't beat that!  
The filling is similar to something you would use for enchiladas but instead of rolling it up in a tortilla, you bake it in a roll.



Ingredients:




1 package (8 ounces) cream cheese, softened
2 cups cubed cooked chicken
1-1/2 cups shredded cheddar cheese
1 can (4 ounces) chopped green chilies
3 tablespoons chopped green onions
1 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon chili powder
2 tablespoons cilantro
4-6 Hard rolls or buns.

Mix everything together and place in rolls.  Bake at 375º for 5-7 minutes.

**I use about half the amount of cheese the original recipe calls for and I wrap each bun in foil before baking so the bread doesn't dry out.
I usually bake mine at least 10 minutes.

Well, I never would have thought to put this in a sandwich. But this looks delicious!

Also - I've been jumping around to lots of blogs this morning, clicking over from the food carnivals. And your design - with the black background on your site and your photos - was so restful for my eyes. I think it's hard to pull off a dark background (not to mention something different in general), so kudos! :)

How interesting! I'm not that into Mexican, but I LOVE sandwiches so this is really appealing. I think they look great!
