Garden Goodness

My blog posts from now until this fall will probably pertain to tomatoes and my love of summer. :)  I plan on looking at these pictures this winter as I am bundled up in my extra layers of clothing and socks while dreaming of warmer weather and my garden.  Until then, I'm enjoying every minute of this season and savoring everything it has to offer.

Nothing like a fresh batch of pesto made with basil from my garden.  Yum!

Even though my tomato plants aren't looking super healthy this year, I can't complain about what they are producing!

Here's one of my favorite summer salads.  Mix a simple dressing made with oil, vinegar, sugar, salt and pepper.  Then add tomatoes, cucumbers, onion, and feta cheese.  It's also fantastic with kalamata olives.  Mmmm...

I just had my first BLT of the summer and it was delicious!

That salad is making me hungry. I'm going to have to try it out. :) I made your enchiladas a few weeks ago and they were great!

YUM! I love that salad....my fave thing to do with tomatoes is put them with onions, cucumber, salt, pepper and vinegar...touch of sugar. YUM! Now, adding feta would make it over the top! A least one more week until my maters are ready here.

There's just nothing like picking a tomato in your own garden, slicing it up, and putting it on a sandwich. Yesterday we were in Dallas, and I had this wonderful panini sandwich with pesto and veggies. Yum!

Thanks for sharing! I love your abundance of basil and tomatoes ~ I love making caprese paninis. Drizzle rustic bread with EVOO, add tomato, basil, and fresh mozz. and grill with non stick spray in a George Foreman (or panini press). Mmm!

I love seeing summer veggies - it's just not summer without them, and yours look amazing. I'm just getting to the point where I can pick a handful of cherry tomatoes at a time and I even had enough yesterday to let the neighbor girls take some home :) I think next year I'll have to expand the veggie plantings a bit!

Oh yum! Love the salad. :) And what do you put in your pesto? Or to phrase it another way - do you know a pesto recipe that doesn't use nuts??

YUM!!! I just picked my first veggie yesterday from my garden, well actually 4 cucumbers. I am going to have so many cucumbers and tomatoes this year that I am always looking for ideas of different things I can do with them. Keep the ideas coming.

Oh fresh pesto! I need to do this with the basil in my garden. Your tomatoes look great, I haven't got to pick any of mine yet, they are growing so slow and then they are rotting on the underside for some reason.

Looks delicious! I love yellow tomatoes! I recently discovered how yummy my sandwhiches are with the whole basil leaves instead of lettuce. ;O)
